Gillies Bros Distillery specialises in crafting artisanal moonshines, whiskeys, gins, and seasonal brandy, all handcrafted in the Yass Valley. We are a small batch distillery, which means that every batch is unique and crafted with the utmost care and attention to flavours and experience. From milling the grains to fermentation, distillation, and hand-filling and labelling each bottle, every stage of our spirits' production is meticulously executed on-site, ensuring exceptional quality from start to finish.
